Paso Robles Wine Rules to Follow

Here on the Central Coast of California, we love our local Paso Robles wines. With so many to choose from, few deny a glass every once in a while. However, as any wine enthusiast knows, there are certain ‘rules’ to follow with wine, in order to ensure that the wine tastes as good as it can!

As your Central Coast real estate agent, I’d like to share some of these rules with you. If you are featuring some Paso Robles wine at your next dinner party, or are bringing a bottle to a party host, or are even driving across country with it for a faraway friend or family member, keep these tips from Paso Robles Wineries in mind!

Consider them the five ‘cardinal sins’ of ruined wine:

1.  Leaving your wine in a hot car. Whether you’re on a road trip, or you’re just running errands after stopping by a Paso Robles vineyard, leaving your bottle of wine in your hot car will ruin it. If it’s 80 degrees outside, your wine is cooking inside. It will change the flavor and could compromise the seal or cap, which leads to oxidation issues. Pack a cooler!

2.  Over-chilling your whites. When you over-chill a white wine, it could end up tasting too acidic, too tart, or too much like nothing at all! In order to really pick up on the wonderfully subtle nuances of white wine, you should take it out of the fridge or wine cellar and leave it on the counter for 30 minutes before pouring.

3.  Not knowing which reds to decanter. Not all red wines need a decanting process, but beefier ones do, like a 10-year-old Syrah. You should decant hefty or complex reds for anywhere from five minutes to two hours! Sample during that time so that you really pick up on the changes taking place. If you can’t wait that long, swirling the wine will help increase the air/wine ratio.

4.  Leaving the cork off overnight. A little air is good, but leaving a bottle of Paso Robles wine uncovered for a full night will result in interesting flavors, and not in a positive way. Before going to bed, always make sure that your open bottles of wine are capped or corked.

5.  Aging your wines for too long. We all want to believe that one special day will arrive to give us an excuse to drink that special 1979 vintage wine. However, no one knows what the future holds, so you might as well enjoy those wines deep in your wine cellar now! Some wines aren’t even meant to be aged, so be sure to ask when purchasing.
